Meet the Chef: Mark Weatherley
Mark began his career at The Regent Melbourne. His extensive training and experience includes working in private clubs and high-end restaurants as an Executive chef within Australia and the U.K, Royal Melbourne Golf Club, Florentinos, Onions, The Ritz Hotel London, Le Gavrouche London and Auchterarder House Scotland. Mark is also a qualified culinary trainer for the William Angliss Institute and Chisholm Institute.
Meet the Wine Guy: Shannon Woollard
Shannon is a specialist copywriter for Vintage Cellars who has worked in the wine industry for nearly 15 years in various capacities. He originally trained as a freelance journalist and was assistant to Nick Stock on the Penguin Good Australian Wine Guide from 2010-2013. A largely self-taught oenophile, Shannon is now an Australian fine wine champion and educator, who supports a strong gastronomic and slow food agenda.
